Ingredients:

  • 1 cup lentils (rinsed)

  • 4 cups vegetable broth

  • 2 cups fresh spinach

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 tsp turmeric

  • 1/2 tsp black pepper

  • 1 tbsp olive oil

  • 1/2 tsp salt

Instructions:

  • Heat olive oil in a pot over medium heat. Add diced onion and garlic, sauté until fragrant.

  • Add lentils and vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes.

  • Stir in turmeric, black pepper, and salt, then add spinach and cook for another 5 minutes.

  • Serve warm and enjoy a nutrient-rich, anti-inflammatory meal!
