Ingredients:

2 medium sweet potatoes

1/2 cup black beans (rinsed and drained)

1/2 avocado, diced

1/4 cup crumbled feta cheese

1/4 cup cherry tomatoes, diced

1 tbsp olive oil

1 tsp cumin

1/2 tsp smoked paprika

Salt & pepper to taste

1 tbsp fresh cilantro (optional for garnish)

1 tbsp Greek yogurt (optional for creaminess)
Instructions:

Preheat the oven to 400°F (200°C).

Wash the sweet potatoes thoroughly and pierce them several times with a fork.

Rub with olive oil, sprinkle with salt, and place them on a baking sheet.

Bake for 40–45 minutes, or until soft when pierced with a fork.

While the sweet potatoes bake, heat a small pan over medium heat. Add black beans, cumin, paprika, and a pinch of salt. Stir for 3–5 minutes until warmed through.

Remove sweet potatoes from the oven and let them cool slightly before slicing them open lengthwise.

Stuff each potato with black beans, avocado, tomatoes, and feta cheese.

Drizzle with Greek yogurt (if using) and garnish with fresh cilantro.
