Sweet potatoes are loaded with fiber, beta-carotene, and antioxidants, which support vision, immune function, and gut health. Ingredients:

  • 2 medium sweet potatoes

  • 1/2 cup black beans (rinsed and drained)

  • 1/2 avocado, diced

  • 1/4 cup crumbled feta cheese

  • 1/4 cup cherry tomatoes, diced

  • 1 tbsp olive oil

  • 1 tsp cumin

  • 1/2 tsp smoked paprika

  • Salt & pepper to taste

  • 1 tbsp fresh cilantro (optional for garnish)

  • 1 tbsp Greek yogurt (optional for creaminess)

Instructions:

  • Preheat the oven to 400°F (200°C).

  • Wash the sweet potatoes thoroughly and pierce them several times with a fork.

  • Rub with olive oil, sprinkle with salt, and place them on a baking sheet.

  • Bake for 40–45 minutes, or until soft when pierced with a fork.

  • While the sweet potatoes bake, heat a small pan over medium heat. Add black beans, cumin, paprika, and a pinch of salt. Stir for 3–5 minutes until warmed through.

  • Remove sweet potatoes from the oven and let them cool slightly before slicing them open lengthwise.

  • Stuff each potato with black beans, avocado, tomatoes, and feta cheese.

  • Drizzle with Greek yogurt (if using) and garnish with fresh cilantro.

  • Serve immediately and enjoy a nutrient-dense, delicious meal!
